I have a question about the different ways to make pasteles... My mother in law makes them wrapped with foil instead of banana leaves. Have you ever had them like that?

Also does anyone know where ayyaca's originate from?

My father made pasteles and I remember him using red banannas also, I never see them in my local latio market. If the pumkin (Calasaba) is not available will it be ok to leave out. I can't wait to try them, my dad passed away 3 yrs ago, and I want to take up the tradition again.

Ayacas are from Ecuador.

Pasteles are made in foil when parchment paper or banana leaves are not available.

Most any kind of banana can be used to make pasteles. I have seen red bananas in local supermarkets. They are called "burro bananas". Yes. you may omit calabasa.
