Flan

1 12 oz. can evaporated milk
5 eggs
1 tsp. vanilla extract
1/8 tsp. salt
1/2 cup sugar (for mix)
3/4 cup sugar (for caramel)

Directions
In a Pyrex (glass) round baking mold, place the 3/4 cup sugar and cook on medium heat (Do not stir) until you get a golden light brown caramel. DO NOT BURN FOR IT TASTES BAD!!!

Coat the caramel all around the mold and set aside.

In a blender, mix the eggs, evaporated milk, 1/2 cup sugar, vanilla extract and salt.

Pour the mix through a strainer and into the caramelized mold.

Cook in the microwave oven for 8 minutes covered.

Be sure and put a plate under the mold in case the carmel over flows.

To make sure it is done, do the knife test by inserting a knife in the middle of the flan. If it comes out clean, it is done.

Let the flan cool off for about 2 hours. Run a knife around the rim of the mold then, very carefully, turn it over onto a flat plate just before you are going to serve it.

Garnish with berries.
Tips
If you love the caramel, add more sugar when making the caramel.

Serve with ice cream or your favorite fruit.

Try it with "Cool Whip". Yum, Yum!!
