Horchata de Arroz

1 cup long or medium grain rice
1 cup water
1 can of evaporated milk (diluted)
1/2 cup sugar
1/2 teaspoon cinnamon
1 teaspoon vanilla
Directions
Place rice in a bowl with enough hot water to cover and soak overnight.

The next day, strain the rice and throw away the water.

Place the rice, 1/2 cup of fresh water and 2 cups of diluted evaporated milk in a blender.

When all the rice is ground up, add the sugar, vanilla, and cinnamon. Blend well.

Add the remaining two cups of diluted evaporated milk, the remaining 1/2 cup of water and blend well.

Strain through thick layered cheesecloth. It may be necessary to strain more than once but do not squeeze the cloth.

Chill and serve.
Tips
This refreshing drink is a favorite for both young and old.

Just say NO to all those hot and spicy dishes by putting out the fire with the horchata drink. The rice starch in this drink is an excellent source to cure your fired up tongue and mouth.

Excellent in the summertime for those extra hot days.

Make a slush by adding crushed ice to the drink.

Substitute the rice with your favorites such as “ajonjolí” (sesame seeds).
