Ensalada de Macarones

1 large package of elbow macaroni
4-6 large hard boiled eggs
1 c. celery
1/2 c. chopped onions
4 chopped pickles
1 large chopped green bell pepper
2 tbsp. chopped black olives
1 can sweet red peppers (pimientos morrones)
5-6 chopped red radishes
1 1/2 c. cubed Velveeta cheese
1 1/2 tbsp. mustard
1 c. salad dressing thinned down with milk, a little sugar and a little vinegar
salt and pepper to taste
Boil the macaroni in salted water per box instructions.
Boil the eggs.
While the macaroni and eggs are cooking, chop the celery, onions, pickles, bell pepper, olives, sweet red peppers, radishes.
Cube the Velvita cheese.
Once the macaroni is cooked, drain and place it in a big bowl.
Add the mustard and all the chopped ingredients including the eggs to the macaroni and sprinkle some salt and pepper to taste. Set aside.
Take 1 cup of salad dressing and thin it down with milk, add a little sugar and a little vinegar.
Pour over the macaroni and mix well.
Refrigerate for 2 hours and re-mix before serving.
Add fresh chopped apples for a sweeter taste.
