3 ripe yellow plantains
4 tbsp. butter or margarine
2 cups sugar
1 1/2 cups water
1/2 cup wine or water
1 tsp. vanilla extract
1/4 tsp. ground cinammon
Directions
Cut both ends of the plantain and run the knife along the entire outside curve, making sure you cut into the thickness of the peel.
Peel the banana and cut diagonally making 3/4 inch thick slices.
In a frying pan, heat the butter or margarine on low heat and as soon as the butter is melted, add the bananas slices.
Turn the heat up to high and fry the bananas, making sure you don't burn them.
Turn as necesary and fry until they are golden yellow. (6-8 minutes)
Reduce heat to medium and sprinkle with sugar and water. Be careful when you add the water. Stir.
Boil for 10 minutes and add the wine or water, vanilla and the cinammon.
Reduce heat to low and let them cook for another 20 minutes.
Serve them hot with ice cream on the side.
Tips
Serve with vanilla (or any other favorite) ice cream.
